How many hdmi cables do i need? (hopefully a simple answer) & dvd player choice

Yes, that's right, but you'll also need an HDMI from the amp to the TV. Oh, and an optical digital cable between the Sky+HD box and the receiver, as the Sky+HD box only outputs stereo over HDMI, and 5.1-channel only over optical. And if you want to feed the sound from the TV's onboard tuner through the amp, you'll need an extra digital connection there, too.

Indeed - provided their video is connected by composite or component video, the Yamaha will upconvert and upscale them and output the video via HDMI.
