Do we really need HDMI connection on our receiver/Home theater ?

I am confused now that all the latest home theater component system comes with HDMI connectivity. But, now they are selling cheap for the older model which do not have that HDMI function. I am using HDMI DVD player and also planning to grab blueray player later.

My question is;

1. Do I enjoy max sound 5.1 or even 7.1 channel using coax cable or other lower version than HDMI? What cable is the best?

2. Is HDMI is still the best option?

Assuming both the player has full HD decoding and multichannel analogue outputs, and the receiver has multichannel analogue inputs, then you could manage without an HDMI input on the receiver and still get all the current sound formats.
