Downloaded latest software update, my iPad has now become very slow and unresponsive.

As you type into Google or this forum for instance, you have to wait for the letters to 'catch up'.

You can type a whole sentence before anything appears on screen.

Ive had to delete the app that controls my Denon Ceol as its decided to default into max volume.

Is it possible to revert back to old software???

You will probably just have to wait for the next update which will improve things.

Follow this guide.

unfortunately 8.4.1 is no longer signed by Apple so you can't roll back to it, you can however roll back to 9.0.1.

hope this helps.

For future reference, when Apple post a firm ware upgrade, the old one is "signed" for two weeks and you can roll back. After the two week period things get difficult.
