using the 5 channel pre outs of the DMP-BD30 to a NAD T-163 can i get 7 channel sound?

No, you'd need a Blu-Ray player with 8 channel outputs (remember the sub!) or an amp capable of receiving the signal via HDMI.

you will only get 5.1 to the AV processor, if that can then out put to 7.1 you will get processed 7.1 but not the 7.1 on the disc.
