I bought the Disney film Bolt on the strength of REL using it as a demo disc a couple of years back at the Bristol show. The opening 10 mins or so are amazing.

Pacific Rim, seconded. Ive seen it at a few friends houses and the colours clip really easily on a poorly set up TV.
Howls Moving Castle was absolutely stunning on bluray. I quite like traditional animation on bluray as you start to see the texture of the lines drawn. Conversely, the lion king looks a bit naff on bluray as the lines are soo textured they look a bit ropey.
Hummingbird was a surprisingly beautifully shot film. The Stath actually acts in it as well, which was equally surprising.

Sorry Pacific Rim is a woeful movie. Colour, sound dreadful.

I could sit you down and it would blow your socks off with that film - the bass is incredible - I dont mean thumping or bumping/ booming either.
I mean tight bass that adds so much to the film and is extremely well done considering what they have to try and simulate.
I do that with 1 sub and I think the film was mastered with at least 2 subs so anyone with dual subs could dare say get even more accurate
Sometimes the vocal is not quite in tune - again they are simulating being in a cavernous hollow in terms of echo when really they are in a studio. However this is a small gripe. The Music score is also excellent and very good quality throughout

The picture looked great, Plenty of detail in the dark scenes ( again this is DVD upscaled to 1080i)
The 5.1DD audio was amazing. You know when they steer sounds to the rears and you just go "oh cool sound out of the speaker" well I was getting sound from the whole corner of the room which went very well with what was on screen with the sound meant to be behind you in another room of the house. Very good, very full sound.
I'd be interested to know if any of you guys have seen it and agree with me?

But after picking up tips from here and weeks of tinkering it all works really well.
The sound & picture will surprise.

For a really good sound & vision experience try District 9 .

I watched the 3D version at the cinema and it was very good. One of the better 3D films I've seen. Haven't watched 3D blu ray (although I own a 3D disc - for future watch).

I'm with ellisdj and bigboss: Pacific Rim is a reference-level demo disc for both picture and sound.
@Son_of_SJ: Pacific Rim is one of the best post-converted 3D I've seen, right up there with Avengers. I usually bring along a copy to demo after I calibrate 3D for clients.

I gather that the plot of Pacific Rim is not the most demanding, but hey, there's absolutely nothing wrong with two hours of popcorn movie!
In a very similar non-intellectual vein to Pacific Rim, and equally good demonstration material for both picture and sound, is Battleship, which I own. Home Cinema Choice magazine rated the Blu-ray as reference for both picture and sound.

I'll change the mood slightly and offer one of my top three Blu-Rays of all time (not just for sound and picture quality but also for the plot, the other two being "Argo" and "I've loved you so long") namely the Spanish psychological horror (but only certificate 15) "The Orphanage". The picture is very good, but the sound is really excellent -not loud all the time, but intermittent sudden noises, panning around the whole soundfield whether outdoors or in creepy interiors, very deep notes in places, shocking impact on occasions - really, really top-notch.

For calibration, I bring along Casino Royale and The Dark Knight (IMAX sequences only) for a few reasons:
- Familiarity: these discs have been around a long time, and I've been using them to demo since, well, Blu-ray started.
- No copyright notices and unnecessary BD-Java: some customers own Blu-ray players that are quite slow to load!
- Specific scenes to check flesh tones, shadow detail, colours, gamma, etc.
