which is best ?

Assuming I have the best connector of each type, which will give me the best sound (to home cinema amp from blue ray and freesat) : HDMI, digital interconnect, or analogue.

HDMI is the only one of the three that will carry HD audio*

*3 or 4 pairs of analogue interconnects will carry HD audio if you have a DVD/BD player that can decode audio on-board, has multichannel outputs and you have a receiver with multichannel inputs.
