I'm looking to purchase an AV unit in near future (Denon on Onkyo). We have a standard Sky+ box and I'm wonderiig what the best connecting cable would from the sky box to the av box to get the best out of the upscaling capabilities the AV units have. Thanks.

My Sky + box only has a few connection options on the back, I have sent my picture direct to the tv via scart and using RGB.

For sound I used an optical lead direct to my amp.

If you buy a receiver that upconverts analogue to hdmi, your best bet would be to have the receiver connected to your screen by hdmi and then s-video from Sky + box to receiver. Your receiver won't have scart connectivity. I think that the Sky + boxes have optical so that would be the way to connect to your receiver for sound.

Like Gerrardasnails says, your only real option is to go via the S-video into the AV receiver. It's worth experimenting to see what gives you a better picture: S-video via receiver or RGB Scart straight into tv. You may find that your tv does a better job with the RGB scart connection as it is a higher quality signal.
