The quality is determined by the DAC (Plus its associated components) contained within the equipment. (If all are of high quality then there should be no difference between any of them)

HDMI if you are talking about lossless surround - its the only 1 that support it.

Otherwise not much in it.

But the sky box is connected directly to the tv as my kids don't know how to use the hi fi, so shall I use an optical or digital coax to connect the sky box to the receiver, which is best?

I prefer coax to optical for physical connection preference. SQ should be the same.

Yes, use HDMI to connect your Apple TV box to your receiver, mainly to minimise cable-clutter (Apple TV doesn't output HD Audio so far as I know).

+1 for coax if your sky box has it (older ones may only have an optical connection), a more sturdy physical connection.

think older ones don't, newer ones do (sky used to use a range of manufacturers - pace, thompsons and amstrad I think - and the spec varied slightly). Have a new box that was sent through about two months ago and that has a coax connection. Am surprised the ops unit isn't outputting a DD signal via coax though, can't think why it wouldn't?
