i have a pace sky box and would like to know why some hd broadcasts look far superior to others

Because some HD content is superior to other HD content - simple as that!

From the quality of the source programme (is it true HD, or upscaled?) to the bandwidth of the HD channel (higher bandwidth enables higher quality), there can be many variations, both within and between channels.
