Help setting up my Denon AVR-1610 for 2-channel stereo

I'd like to buy the new B&W 686 S2 speakers and have a 2-channel set up. Unfortunately, my budget at the moment doesn't stretch to a new stereo amp with optical connections. Therefore, I'd like to use my old Denon AVR 1610 until I can get a new amp.

I have a bluray player, an Apple TV and would also like to have sound from the speakers whilst watching TV.

I am familiar with setting this amp up for 5.1, but am not sure about setting it up for 2-channel.

Can anyone give me some advice? For example, do I still use the Audyssey set up? What settings do I need to use on the Denon AVR? The manual for this AVR isn't easy to understand.

Normally it should be enough to just run the Audyssey set-up: it should automatically detect what speakers are in use, measure them and set all the settings in the amp accordingly.

You can verify if Audyssey did a good job by going to "speaker setup", then "speaker settings". All the channels should be set to "none", except for the front speakers.
