Is it possible to play my sky+ through my stereo amp. I would like to play the music channels thru stereo speakers and stereo amp whilst viewing the videoes on screen. Im using the hdmi lead and the spdf lead to the av amp for normal daily use.

Yes: both the Sky+ and SkyHD boxes have conventional analogue audio outputs, AFAIK. It's just a case of running a pair of interconnects from those to a spare input on your stereo amp.

will i have to change any sound settings on box for it to sound right thru 2 spaekers and not my 5.1

Don't think so – the analogue output should just be a stereo downmix of whatever's being played.
