Could I replace the DVD player in my SONY DAV DZ260 1080p HCIAB for a Blu Ray player?

Nope as the sony is also the amp for your system. You could replace the whole lot with a panasonic blu ray cinema in a box thingy though. Look under all in one systems on the review section.
