With so many hi-fi manufacturers going out of their way to accommodate Apple (products with docks, AirPlay, digital USB inputs etc), why do so few hi-fi streamers on the market support ALAC?

Principally because Apple has kept ALAC close to its chest for so long. However, now ALAC is going open-source, and it looks likely that more devices will support it. In the meantime, there's always FLAC...
