Yamaha YSP-600 + Virgin HD box + bdp-s570

I understand that the YSP-600 does not take HDMI audio...

My question is Can I still use HDMI from the Blueray player and The virgin + HD box and get audio? and surround sound (if programme carries it)

It does take HDMI audio, just not HD HDMI audio, eg from a Blu-ray player. You can connect up using HDMI from your STB and BD player, but the best you're going to get with either this connection or an extra digital one is standard defiinition Dolby Digital/DTS.
