Some may listen to soundstage width and/or depth, some to ambient detail, some to dynamics and leading edges of notes, some as to whether they can hear all instruments at the same time, some to compression and other artefacts, and some will compare it to their experiences of live music - yes, some of us actually listen to live music. I would suspect, when many people say they can't hear a difference, it's down to the fact they're comparing tonal balance, which, while it can be different, especially between speakers, is largely very similar when comparing most electronics.

They will never be completely flat, that's just not going to be possible also, you are ignoring the fact that manufacturers will often apply filtering (e.g. high frequency roll-off) to modify the output.DACs have flat frequency responses.
Yeah...the speakers need to be right for the room they're in, and right for you. If you're lucky and you're listening room is good acoustically, then you're going to find it easier to get hold of speakers that sound good to you.Precisely.
Get the wrong speakers for a particular room and it will not matter what quality your front end equipment is.
