I'm considering purchase of a pair of Panasonic DMR-BS850 recorders, to play alongside a Pana TV. Does anyone know whether / how the Harmony remotes (in particular either One or 900) will be able to differentiate between the two recoders and control them as separate devices ?

Assuming the recorders are able to accept separate IR commands - ie they have switchable command-sets - then it shouldn't be a prob.

Bob first of all you need to sync the supplied remote control with the second BD player to 'BD 2', as shown on p.122 of the manual. Then after you've added the BD devices in the Harmony software, you'll need to go into Device>Device Options>Confirm Infrared Commands and teach the Harmony Remote the new commands for the second BD player from the original remote.

The commands in the Logitech database are for the original remote's 'out of the box' codes.
