Is sound quality via coaxial/optical the same on every cd/dvd-player?

Hi, when you use an external D/A converter with a cd- og dvd-player using the players digital out, will the sound always sound the same if you use the same external D/A converter? Or is the sound influenced by the specific player's construction before it reaches the digital output stage (ex. transport)? It seems logic to me that the digital out would not be colored soundwise in any way, but is this wrong? Is the players sound different for each player even though you use the digital out, and not as I would like a direct output of the 0's and 1's of the disc played?
