I currently own a pair of Bowers and Wilkins P14 headphones but also have a wired pair of Shure SE215 headphones. If I attached a DAC to the wired headphones would the sound be massively better than the bowers and wilkins.

Might depend on your source and the dac you intend to buy. It's a bit like comparing apples and oranges.....

I don't know that phone well enough, can you get a digital output from it, I assume you can

Plug a DAC in the USB-C.
Android does support USB audio.

thanks, does it know it is outputting digital to a DAC or does it have a separate analogue socket for headphones?

If I plug in a USB DAC, it switches to USB audio, likewise if I connect a Bluetooth headphone, it switches the output to BT.
At least this is how my A40 (3.5 out) behaves

No.
The biggest difference are in general the drivers them selves.
No idea how the both of them sounds.
"massive" probably not. Refinement, maybe.

Somebody with a good quality DAC in your neighborhood?
