does sky output an S-Video signal?

I have regular sky and I am going to connect to my Onkyo 875 - should I just use a regular composite video lead to the amp, or could I use a Scart - S-Video + 2 audio (phono) and connect that to the amp instead? which would give the better upscaled pic?

I seem to remember reading that sky doesn't output an s-vid signal.

Will be connecting to a Panasonic 42PZ85

Sky+ definitely has S-Video out but I can't remember if the standard Sky box does. Have you checked the back? S-video is definitely preferable to going the composite route if you have the choice. Otherwise it's definitely worth upgrading to Sky+ if you're not considering going HD for a while.
