Except that your ears / brain will be lying to you, doncha know?
Here's the conundrum:
Sighted tests can be flawed because of expectation bias, where people might think they hear differences when none actually exist.
Blind tests can be flawed because of stress, where people might not detect differences that are actually there.
I don't have the solution to this, apart from suggesting that each person uses the testing methodolgy that they are happiest with.
