2001 looks and sounds stunning. CASINO ROYALE and THE ROCK both look and sound great, too. But they're all 2.35:1, not 1.66:1.
INTO THE BLUE isn't a great movie, but it sure looks fantastic! Attractive people in swimming gear underwater......
If you want to go full 16:9, try HELLBOY or HAIRSPRAY.
Left-field recommendation. Celine Dion in Las Vegas. Looks stunning (shot in HD) an sounds fantastic - if you can cope with the Diva's voice....

If you're looking for something to actually test the system with, as opposed to something that shows it off, then the _HD Basics_ disk includes a number of audio tests such as tone sweeps through each speaker in turn, panning exercises, and video test patterns including an audio/video sync check, along with the usual video setup test patterns.

Or you could presumably use one of the DVDs with the THX Optimiser stuff on - can't remember offhand what they include in the way of audio checks though.
