Well, after fiddling with various settings to no avail and giving up it now seems to be working without any issues on my phone again. I can only assume they managed to fix things at the Apple end and I didn't have to wait for an update. Glad it was resolved during the 3 month free trial period. Also happy that I didn't have to haul my carcass to an Apple Store either. Hopefully things are smooth from here on.
Now, if they could just improve the interface, but I doubt that will happen much because iTunes itself seems to get progressively worse with each update (or I'm turning into an old fart set in my ways).
