I did this some time ago.

The most straightforward way is to install the Thunderbird email client on your Mac, which will import all of your Apple Mail settings and messages. Then install Thunderbird on your PC and just copy your user profile across from the Mac. I actually use Thunderbird on my Mac all the time now, as I find it a much more reliable, and considerably faster client than Apple Mail.
