I have a Sony KDL46Z5500 TV and a Sony LDPS760 Blu Ray....which AV amp would you recommend to get the best out of the TV and Blu Ray(I was considering the Sony DH800, Denon AVR-1910, Denon AVR-2310 or maybe the Sony DA5400ES)? Also, any thoughts on speaker packages? With thanks.

It all depends how deep your pockets are.
What's your budget and how strictly will you have to stick to it. (i.e could you push it 10% if required)?

Judging by your present kit, the Denon AVR-2310 would be a great choice, in my opinion.

Does that £1,500 include speakers as well or just the amp? If just the amp, you can get a great amp like the Sony you mention, but you'll need to spend at the very least the same again on the speaker package to take full advantage of it.

My amp was £1k. My speaker package was around £1800 or so RRP.

Sounds about right. Have you already budgeted for cables?
If not, knock the receiver budget down to £900-£1000 or so, depending on the size of your room and if you want 5.1 or 7.1.

You really should demo when spending that amount of money. One of the bargains around at the moment is the Yamaha 3900 which you should be able to get for about a £1000 now; this was £1300 not that long ago. If you can stretch the budget, the yamaha Z7 is now £1500 and again, not long ago, was a few hundred more than that.
I would demo with speakers from the Monitor Audio RX range (or the deeply discounted RS range that are still about), B&W, KEF and the new Mordaunt Short Aviano range and their existing Mezzo speakers.
