i have my 875 on pure DDigital and turn up the centre a bit. Tends to be pretty good with andy gray / martin tylers commentary, and decent effects from the crowd to the rears.

I'm not sure there is a "best" mode, just use what you prefer. For example, I used All Channel Stereo for a few weeks to try and get a pub atmosphere in the living room. Then I realised it didn't really work and I didn't really like it so went back to plain old Dolby Pro Logic.
