what composite to use

Probably because there aren't so many anymore. Use what you have, HDMI will swamp the connection market within oh.. wait.

What equipment are you wanting to connect with composite? Can't see it being anything that you have listed as part of your main set-up...

just a couple of bits that come out of the cupboard every now and again nothing that sits on the rack old vcr to go with my last half a dozen videos and a kareoke machine wich only has comp output

I wouldn't be inclined to spend too much on a composite cable, but something like this would probably do the job:
