say i have ran my mic for my denon1909 and it gave me front right, front left and centre all at 8.5db and the back right 9db and back left 6.5db and subwoofer at 3.0db

i must have the volume of the sub high i guess. my back wall is from 5metres to 3m behind me it is at silly angle.

so my question is why does it pick them volumes and not sub 0db and every other one 3db less does it make any differance to sound or is it just to save you turning the amp up louder

The test signal is white noise and is designed to be at (IIRC) 75 db when its played. So to get that level on all inputs from where the mic was sat - thats the result you have (Although dont be too suprised if you find the subs level doesnt sound right, they usually need manual tinkering)
