Does Coaxial vs Optical really have any difference?

I don't have much to start this off with I'm afraid, but I must say I've read so many different views on it and can't seem to work out why!? Correct me if I'm wrong, but don't both of these mediums carry little 0s and 1s from one piece of equipment, to another. How can one sound better than the other? Surely it's down to what sends the data and what receives the data, not the piece of copper or glass in between? I've always used optical, but that's only because I got all the cables for free from work. If I have the option of coax, should I be using it?

And you dont have to spend a fortune for a decent coaxial cable look at the Chord range or the Ixos but try to keep the length as short as possible.
