Do we have access to the whole of youtube with the ipod touch or will it be a shrinked down version?

The Apple website has this to say:

"Got a bit of a YouTube addiction? iPod touch feeds it from anywhere with a special YouTube player built right in. Watch featured videos, check out the most viewed, search for something specific, then bookmark your favorites for future reference. It's all the fun of YouTube - pocket-size."

But what it doesn't say, is that you will only be able to view YouTube videos that have been converted to the compatible Mpeg4/h264 format. YouTube is slowly converting all videos to this Apple format, but at the moment it seems to be about a third of YouTube content is currently available for the Apple TV, iPhone and iPod Touch. This should rise in time.
