Firstly, I doubt there is much recorded after the late 80s that is on analogue tape. So you are going to be looking at old music, not current.
I spent some time restoring old tape in another life. The binder that holds the ferric oxide onto the tape deteriorates with age and about the only way to play old tape without wiping off the oxide is to bake the tape first. This fixes the ferric oxide, but only temporarily - you get a few plays after baking, but then the tape deteroriates rapidly.
Those old analogue 1/4" masters are the crown jewels of the record companies, and no one is gong to get access to them. EMI aren't going to be lending the master of 'Yesterday' to anyone.
What you might get if you are lucky, is a second or third generation copy. Frankly, if I were running EMI, I wouldn't even allow a fourth generation copy to leave the building. There is a whole future stream of revenue for EMI by going back to the master (even if a copy) and selling the same music in yet another format. Why give that away?
So my guess is that this will remain a niche of a niche, with very limited choice of music.
As for quality, if done correctly, there should be no real difference in an analogue copy or digital copy of whatever the source was. If anything, the digital copy should be better.
