Is the o/p of Playstation 3 a 2.0 channel LPCM or 8 channel LPCM over HDMI to reciever when playing 5.1/7.1 HD SOUND. I mean will all my 6 speakers(in a 5.1 setup ) get the multichannel sound.
As long as your reciever can decode lpcm you will get 7.1 or 5.1 via HDMI. if your reciever can-not decode lpcm, connect your ps3 to your reciever via a fibre optical cable and you will get 5.1.

You get 7.1 over LPCM from a PS3, here's the front panel of my Denon 1909, the info on the left clearly shows the 7.1 input from the PS3, with the 5.1 output to my speakers on the right.
Now what recievers accept over LPCM is another thing, the Sony 710 for example will only accept LPCM 2.0.
As GJL pointed out your receiver is likely only able to receive 2.1 PCM over HDMI. As already mentioned, use the PS3's optical out to your receiver to get 5.1.

Now what really confusing is that as per the O/P options on PS3 (as shown by the image below,as found on the link below)there is no option for 8ch Linear PCM, then how is this possible? link to the page where image was found
Do you not see that the screen shot you have posted has a scroll-bar on the left-hand side? You are not looking at the full list of output options the PS3 has by a long way, full details of which can be found on the on-line manuals for the PS3...
...which quite clearly explain that the the PS3 will output 7.1 over LPCM. The screen-shot in my post above also shows this, as long as you have an amp that can accept 5.1 or 7.1 audio over LPCM then you will get it. All you need to do is run the auto set-up on the PS3's audio options and it will set all the formats that the reciever can accept.
Here is a screen-shot from further down the PS3's audio option list (and you can still see that the scroll bar has more to go)....
.....and this shows the start of the multi-channel LPCM outputs. It goes all the way to LPCM 7.1 192khz.
I can 100% assure you that the PS3 outputs multi-channel LPCM audio at 7.1, follow the link I have provided above, in which Sony themselves detail all of this.
