In using iTunes, can I create seperate folders for different files?<p>

I know that in iPhoto, all photos go into a big library and the "folders" are really just groupings of shortcuts. That makes me crazy! I want to be able to physically have control over each and every file structure. In other words, Artist -> Alburm -> Track. How does iTunes group files?
