Night mode only appears as an option with a Dolby soundtrack so DD or Dolby True HD.

Have you run the auto calibration with the microphone?
This will give you a starting point for the speaker levels from your seating position

You can then increase the centre speaker level manually.
With the remote in receiver mode press the audio button and toggle round the options to select 'Centre:' and set as desired.
My centre is set to +4db
It would be in this menu that night mode would appear with a relevant sound track.

There's no correct setting for these levels so don't just adjust yours to what someone else has as it won't be right for your room. The levels should have been set automatically when you used the microphone to setup the receiver, however, you should definitely adjust by ear to what you prefer - use the test tones and adjust each one so that is sounds like the noise from all the speakers are at the same level when sat in your normal sitting position for movie watching.

As aready said run the setup with the microphone first and then adjust to your preference.

'Night mode' as the name may suggest is if you want the sound softened so as not to disturb the neighbours at night.
So in effect speech thought the centre speaker is unaffected and other speakers are dialled down.
So I think this is why it was suggested in answer to your original question.
Although just adjusting the center speaker is what you really need to do to get the centre louder.

You will only get night sound showing in the menu if it is a soundtrack that supports it.
I think this is only available on Dolby variants.
So when your display is showing Dolby D or Dolby True HD.
