If I buy a new TV (LG Oled C9) and it has eARC (HDMI 2) support then will I be able to play sound from that TV with my older receiver (VSX 520) with no ARC support? Will it automatically switch to older version of HDMI signal to transmit audio to receiver?

NO, There was no way to transfer audio back to a receiver on the same cable before ARC, however there is no need to worry, as all you need is a digital optical cable to connect between the TV and Receiver to get audio direct into the receiver from the TV. (Have a look at Amazon basics cables)
