From various reviews I've picked out the Panasonic SC-BT200EB-K Blu-ray Disc 5.1ch Home Cinema System and I'll probably pair this with a Panasonic 37" LCD. I will also be using the system for music.

Is this a reasonable choice for a novice with that sort of budget?

I will be running Sky HD, will I get Sky surround sound?

What cabling will I need and do I need to get special wall-mounts for the speakers?

Yup, sounds like a good choice to me. And yes, you'll get surround sound with Sky provided you run an optical digital cable from your Sky HD box to the Panasonic SC-BT200.

As for other connections, you'll need two HDMI cables, one to run the picture from the Sky HD box to the TV, and a second one to connect the Blu-ray system to the TV.

All the necessary speaker cables should be included in the box with the main Blu-ray system. If you need wall mounts for the rear speakers, I'm sure your retailer will be able to provide them.
