Since you're happy with CD playback but Apple Music via Airport Express sounds flat I'd suggest you try a different streaming solution that doesn't involve Airport Express. It looks like it could be the culprit.
Yeah, my bad. Just noticed you couldn't go balanced. If it was possible I still would as many USB interfaces will transfer a lot of noise from PCs when used un balanced. I know my Audient ID14 does, so that would be preferable for me even for short runs.
